New BBQ Makes Delicious Veggies Too

It's always difficult to think of useful Christmas presents that will carry on being useful after the yuletide festivities have ceased.

The BarbeSkew is excellent both for roasting meat and for grilling vegetables. To prepare a vegetarian mixed grill, you will need: olive oil, crushed garlic, one squeezed lemon, salt, pepper, pine nuts or sunflower seeds, soy sauce, and whatever vegetables you want. Some tasty suggestions include: sweet potatoes, white button onions, courgettes, white leeks, ears of corn (cut into 2cm-thick sliced rings), and portobello mushrooms. To make the vinaigrette (to serve eight people), mix two teaspoons of Dijon mustard, one tablespoon of liquid smoke (if you like a really smoky flavour), and one tablespoon of balsamic vinegar.

While the BarbeSkew heats up, place the sweet potatoes in boiling water for four or five minutes and then drain them. Mix 4 to 6 tablespoons of olive oil, 2 cloves of crushed garlic, the lemon juice, salt and pepper (according to taste). Put the vegetables on to skewers and brush them with the olive oil mixture. Barbecue the skewers for 8 to 10 minutes until browned and tender. Remove the vegetables from the skewers with a fork. Be careful because the skewers and the vegetables will be very hot! Drizzle a little vinaigrette and soy sauce over them and sprinkle a few pine nuts or sunflower seeds on top.
